These are hands down one of my most loved recipes to date! They’re such a crowd pleaser and super quick to whip up. The Rice Krispies give them a deliciously light and crispy coating!
KRISPIE CHICKEN GOUJONS W/ SRIRACHA MAYO

INGREDIENTS
- 800g chicken breasts
- 120g Rice Krispies
- 2 large eggs
- 100g plain flour
- 2 tsp smoked paprika
- Sea salt & black pepper, to taste
- 2 Tbsp olive oil
Sriracha Dip
- 2 Tbsp mayonnaise
- 2 Tbsp Greek yogurt
- 1 Tbsp sriracha sauce
DIRECTIONS
- Preheat oven to 180°C & line oven tray with parchment paper
- Cut chicken breasts length ways into chunky strips (approx. 3 goujons per fillet)
- Assemble 3 medium size dinner bowls:
Beat the eggs in the first one
Place the flour, salt/pepper & paprika into the second bowl and
Put the Rice Krispies into the third one (crush the Rice Krispies using your hands) - Dip chicken strips into flour, then into the eggs and finally into the Rice Krispies and assemble coated goujons on the baking tray
- Drizzle goujons with olive oil and bake for 25 minutes (turning half way) until the chicken goujons are golden, crispy and cooked throughout
- Combine all ingredients in a bowl for the Sriracha Mayo dip
- Serve with homemade chips and a side salad!
