These are the best summery, 20 minute mid-week dinner! They are so tasty and are super simple to make to whip up, a current favourite in my house.
ASIAN STYLE TURKEY LETTUCE WRAPS

INGREDIENTS
- 800g turkey stir fry strips
- 1 lemon (juice of full lemon and half the zest)
- 1 Tbsp sesame oil
- 1 red onion, diced
- 1 red bell pepper, diced – optional
- 1 fresh red chilli, to garnish
- 2 heads of baby gem lettuce
- 2 handfuls of cashew nuts, lightly toasted on dry frying pan
- 4 spring onions, chopped, to garnish
- Rice to serve – optional
For the Asian Inspired Sauce
- 5 Tbsp Hoisin Sauce
- 3 Tbsp Sriracha sauce
- 3 Tbsp soy sauce
- 2 Tbsp rice wine vinegar
- 3 cloves of garlic, minced
- 1 tsp grated ginger
- 1 Tbsp sesame oil
DIRECTIONS
- Heat sesame oil in a large pan and fry diced red onion until softened. Add turkey strips and cook for approx. 5 mins.
- Add diced red bell pepper (if using) and soften.
- Add all sauce ingredients to a jug and mix until combined. Add sauce to the frying pan and allow to simmer on medium heat.
- Cook rice if serving with the turkey.
- Wash salad leaves and prepare garnishes.
- Assemble the turkey into the lettuce cups and top each one with toasted cashew nuts, spring onion and red chilli. You can also add the rice into the lettuce cups!
- Serve & enjoy!
